Transcripts
(Zach growls)
- Where should I put my foliage?
- Why is it in here? Get it outta here.
- [Keith] I'm in hell.
- Get it outta here!
Hi, welcome, what can I get for ya?
We have 24 hours to create
an entire food truck from scratch.
- I need more burgers!
- Big bottleneck happening right now.
- [Zach] We have a bunch of patrons who are gonna
be hungry for lunch.
- [Jonny] My ex-boyfriend is here.
- [Kwesi] Aw.
You guys.
- I'm concerned about today.
(all laugh)
(lively electronic theme music)
- Some of my favorite restaurants
in LA aren't restaurants.
Here in LA we have something called Smorgasburg.
It's this giant collection of food trucks.
The food truck revolution
in Los Angeles was kicked off
by Roy Choi, friend of the show.
Hey, Roy, please return my calls.
- I'm not made for YouTube, man.
(contestants laugh)
I'm not made for the shit, man.
- The last time we did this, it was a pizza restaurant.
A lot of learning happened.
Dude, you've gotta not be on your phone right now.
- Oh my God!
- Turn off the gas. Turn off the gas.
I got very frustrated at times,
but I was working with a bunch of imbeciles.
- [Zach] Didn't buy oil for our pizza video?
- So, I think we've changed out the cast this time
and it's gonna be pretty smooth sailing.
- [Rachel] Kwesi, say hi.
- Same guys, huh?
Okay.
- I'll give you 40 minutes
to decide your menu, your name,
your concept, your shopping list,
and then you've gotta get out of here.
- Can you write down, we have 40 minutes for what?
- We need to figure out a plan quickly, agree on it,
and execute it.
This is not a game.
We're running a restaurant.
I think food trucks are late night like, drinking eats.
I don't want us to have such an extensive menu.
- [Jonny] Okay.
- That there's so many things going on.
- We have to make the menu, create
the design, figure out the logistics and operations.
- Do we need to have it fall under like, a theme?
- It's a food truck and it has to be fast.
- [Jonny] Yeah. - Yeah.
- So, salads?
- Nobody like salad.
- [Jonny] Yeah.
- Do we just buy a truck?
Like maybe Craigslist?
- We gotta find a truck.
(Zach whimpers)
- Where the (beep) are we gonna get a truck?
- Oh! - Holy shit!
- Snap! School bus!
- [Keith] Careful on that turn.
- [Kwesi] Wow! (laughs)
- [Keith] Oh, my god!
- [Kwesi] Hey y'all!
- Wow, wow!
- That's us!
(horn honks)
- [Kwesi] Hey!
- Someone order a bus?
(Kwesi, Jonny and Keith cheer)
- Big boy stomps! Big boy stomps!
Big boy stomps! - Wow.
That's amazing.
- Yeah!
⪠The wheels on the bus go round and round âª
- [Jonny] Wow!
- Hello, I'm Candice and this is Phil.
We are the chefs and co-owners of "Man Eating Plant"
- [Keith And Zach] Wow.
- So many surfaces.
- We were starting to eat vegan we noticed
that there wasn't vegan food that we loved.
And so we started our food truck in 2021.
- [Zach] Your food is beautiful.
- [Phil] We have all these fridges.
This is like, a salad station.
- [Zach] Fire!
- [Keith] Whoa!
- I like that.
- I'm curious to hear
the difference between running
a brick and mortar restaurant versus a food truck.
- [Phil] So the advantages of having a food truck
are, you can go to the people.
So I do have a microphone
that you guys can use. - [Zach] Shut the (beep) up!
- I think, especially, in vegan food,
because it's on the side
of the street, a lot of people expect their food right away.
And it should be fast, I guess.
- How are we gonna film in here and cook at the same time?
- I'm way too tall.
I'm definitely gonna hit my head at some point.
- [Kwesi] It's like we're in a submarine.
- It's a very intimate space.
Just be aware of where you are
and communicate where you are.
I recommend coming in through that door,
but if you're coming in through this one,
just watch your head.
So many people go like this and step up
and just bang their head.
- That's why you have the bun, right?
- [Phil] (laughs) Yeah. - So its a little buffer,
- [Kwesi] For protection.
- It's vegan.
So everything you make does have to be vegan.
- Wait, really?
- [Kwesi] How is a food truck vegan?
- Can I just throw out,
if we're doing a vegan food truck,
"Zach's Little Vegan Treats."
Do you find that people are less
patient when it comes to a food truck?
- I do find that, yeah.
- [Kwesi] I got a idea.
- Okay?
- [Kwesi] Magic tricks.
No matter what we do.
- I actually think that
the one thing we were missing last time, is entertainment.
- Zach does know a couple about magic tricks
from our magic video.
- I know two.
- Maybe you could learn more in this time.
Maybe that's all you do
in this video. - I know this one.
- Is learn magic tricks.
- Do you have a salt shaker?
So I'm gonna, okay, so we're just gonna make it disappear.
- Whoa!
- Where'd it go?
We have a budget.
So let's get a magician.
- [Kwesi] Somebody with riddles.
- (gasps) What about that guy who did ventriloquism?
- [Kwesi] A riddler.
- A riddler?
- [Kwesi] Yeah.
- It's a bus?
- [Jonny And Keith] "The Magic Food Bus!"
- Come on, you guys!
I'll be Ms. Frizzle.
- [Kwesi] "Try These Nuts."
- It's not a bus pun.
(Zach laughs)
- [Kwesi] Damn.
- [Zach] Let's talk about the food.
We have to cook vegan food and it has to be fast.
- Yo, should we separate and conquer?
- My association with food, truck food, I think
of things that are very simple.
- We've had to adjust our menu a bit.
- Just the volume of food
that we're outputting, it doesn't fit all recipes.
- I think we should do two things.
I think we should do smash burgers.
- Yeah.
- It's just caramelized onions, Impossible burgers.
I already make those.
I know how to make them very, very flat,
so they're very delicious.
I think we don't need 50 pounds
of onions, but we might need 20 pounds of onions.
You know what's actually really good that a lot
of people don't do and haven't had
before is, peanut butter burgers.
- [Kwesi] Wow,
that's different. - Yeah, you can put
a little bit of peanut butter on a burger.
- [Kwesi] How you know all this, Keith?
- I used to work in a burger shop, in college.
- What about like, fries?
- 50 pounds.
- [Kwesi] Lift with your legs, not your back.
- Look, at these strong legs.
- [Kwesi] Oh, god. Dad strong.
- We can also make a simple like, pickled cucumber salad.
- A lot of cucumbers.
- [Jonny] But we don't have a dessert yet.
- [Keith] Deep fried Oreos.
- Plenty pf Oreos, because it's vegan.
- [Zach] You now what's really delicious
that I actually have made, barbecue jackfruit.
It's basically like a pulled pork.
- [Jonny] Great. Love that.
- [Kwesi] Jonny's gonna get bacon stuff.
Keith's gonna get vegan mayo.
- Are we on a sitcom right now?
- [Kwesi] I know.
- This is ridiculous.
- [Kwesi] That's not even real.
- [Jonny] We could do a buns
like, like "Slap My Bun", "Slap it On My Buns".
- Slap it on my buns ain't bad.
- [Kwesi] I like where you going.
- And then we say, "Hi, we'd like to smack your buns today."
"What can we smack 'em with?"
- Talk to me, Jonny. And we can say,
"Jackfruit, burger, sausage."
- [Rachel] Are you getting consent for this?
- Yes.
We'll say, "First of all, do we have your consent?"
(lively salsa music)
- How many people do you normally have in here?
- We've had up to eight people I think, in here.
- (beep).
- Eight people?
- When you're in
the food truck, how do you manage moving around?
- Well, people are placed in positions
and for the most part, you're staying
in your position the whole time.
- One person's gonna take the orders
and that's pretty much all they're able to do, right?
- So, like, Zach is living here?
- [Candice] One person flipping burgers, frying.
- So, Keith's on the grill here?
- Grill's over here.
- And then he goes wachow!
Someone finishes here.
- And then one person expediting.
- So, they have to really read that thing
and know like, this is a single burger, a double burger,
a peanut butter burger, a fried Oreo and fries.
- And then the other person plating.
- And I'm just running around like a madman?
- No one could even really move that much.
- What was probably the most important lessons you learned?
Like for us to apply? Like what-
- What'd (beep) you up?
- What'd you, what mistakes did you make?
- Wow.
There's so many to choose.
(Keith and Zach laugh)
- [Kwesi] Keith, tell us what to do.
- Stressed out.
Okay, I already started cutting some onions.
Those onions are gonna get cut and chopped down.
All those potatoes that we've been soaking, we need
to dump the water out of them.
And then you're going to crank them into an empty bucket.
This is too far down.
These fries are gonna go all over the floor.
- Okay.
- I'm less scared when Keith is not here.
Keith is kind of scary.
- Well. (Kwesi laughs)
- [Kwesi] He's (indistinct).
- Someone's gotta lead.
Prep is super important.
It's gonna take everybody being serious.
All right, so what you're gonna do, Kwesi,
is you're gonna take all these burger patties, cut each one
in half. - [Kwesi] In half.
- [Keith] And roll each half into a ball.
- Oh, this is so cold and gross.
My hands are gonna be so numb afterwards.
I'm just getting lightheaded
'cause my hands are so cold.
- Sure, we can have fun,
but the fun needs to be directly related to the work.
Like see, how there's
like, meat in the garbage. - [Kwesi] Yeah.
No reason for that. - No reason for
that (indistinct). - Why would there
be meat in the garbage?
It should be on the ball.
- Got it.
Honestly, we should have used some of our budget
to hire another person.
Oh, you know what this.
- [Kwesi] You need a base, Jonny.
- [Jonny] Can we screw it in to something?
No, it needs to be anchored.
This would stop this.
The whole thing's pulling forward.
(slicer clatters)
- All right.
- And we need a drill.
- [Rachel] I don't know if we have a drill.
- What we do have is positive energy.
- [Keith] I'm not sure if we have that.
- [Jonny] I don't know if this is food safe.
- [Keith] It's definitely not.
- Holy shit, Johnny.
- It's a pallet.
- Nah, Johnny. (laughs)
No, Johnny.
- How about film clamps?
- [Jonny And Kwesi] Film clamps.
- [Keith] This guy here.
- [Jonny] Okay, should I try?
- [Kwesi] (beep) yeah, Jonny!
- I love it!
Oh.
- [Rachel] You know what they say, Jonny?
Slow is smooth and smooth is fast.
- Oh, yeah. I didn't know they said that.
Who said that?
- [Rachel] I say it to my toddlers.
- [Keith] Today's video is brought to you by Babbel.

Now back to (speaks Spanish).
Okay, Zach is here.
Good news, bad news.
- [Kwesi] Zach's back. Zach's back.
- [Zach] I had to go to Whole Foods.
It was the only place that had jackfruit,
which means we spent way too much on jackfruit.
Where is Zachy-Zach most valuable?
- Well, honestly, un-can all that jackfruit-
- And try it. - and start, yeah.
Getting it ready.
- The longer it goes, the better it flows.
- [Kwesi] I think I'm ready to start smashing some shit now.
Keith, that smells so freaking good.
- [Jonny] I'm making batter for our fried Oreos.
It's funnel cake batter.
- I'm just, I'm measuring with my heart over here.
The ratios are out the door.
We're making progress.
- Let me go around
and do some vibes.
- [Kwesi] Great.
- 'Cause the vibes are weak right now.
We need a lot of plants.
You can't have one plant per table.
You gotta have a lot, man.
This is all about vegan.
You think vegans would've one plant per table?
No.
Aren't they good?
It looks like a jungle out here.
So we're just setting up vibes just
so people can send me a little extra money.
Yo, the vibes are gonna be immaculate.
(Rachel speaks indistinctly)
- What?
- Come on, Rachel!
I got kids to feed!
- Whoo! How do I get out?
Okay.
(door thumps)
A secret door?
Oh, a handle.
- I'm gonna go turn the fryer on.
- [Camera Operator] Okay.
This says to open the valve.
(lighter clicks)
So, the fryer's on and now we wait.
- Keith is gone and it's quieter.
I think we're all kinda, we lost a Daddy.
- It's less scary, that's for sure.
- Put this in here.
So we're doing this because potatoes take (beep) forever
to cook, right?
When you're cooking breakfast potatoes
at your house and you're like,
"Dang, the potatoes aren't done yet."
So you do this so
that these get halfway cooked or par cooked.
When you cook them later, it only takes two minutes
and they're done.
It just allows for it
to be that crunchy, fluffy french fry that people want.
- [Zach] Keith, come on out! The sign's here!
- Yeah.
What's the name of your concept
for this food truck?
- Glad you asked.
- I'm here.
Okay.
We got our sign back from the store.
- Should we tear it open like Christmas?
- Maybe carefully?
- Looks like a giant blunt.
- [Keith] It's so big.
- Oh, yeah.
- Oh, I like the color already.
- You want me to hold one side?
Yeah, you hold one side, you hold there.
- Oh, shit.
- Wow.
- [Jonny And Keith] It's "Bun Buddies."
- [Keith] "We beat meat."
- [Phil] "We beat meat?"
- [Keith] Like, we beat it.
- [Kwesi] Ah!
- [Zach] Yeah!
- We beat meat!
- I love it! - We did it!
- This is perfect!
- What's our budget at right now?
- We're creeping up.
- Yeah, what's it at? It depends on how much...
I think we got...
Oh, you know?
- [Rachel] Luckily, the sign was supposed
to be $400 and they only charged us $90.
- Whoa! - Yay!
- We got $310 to blow!
- We beat meat.
- [All] We beat meat!
We beat meat!
- Bah!
- We beat meat!
- Are their legs music notes?
⪠Everywhere we go, people wanna know âª
⪠People wanna know âª
⪠Beating the meat âª
⪠Beating the meat âª
⪠We are the Bun Buddies âª
⪠We are the Bun Buddies âª
⪠The mighty, mighty Bun Buddies âª
⪠The mighty, mighty Bun Buddies âª
⪠Beat meat âª
⪠Beat meat âª
⪠Beat meat âª
- [Zach] We have an hour to go.
What needs to be done?
'Cause I feel ready.
- Can we go through everything right now?
Just everything on the menu.
Make sure we're not forgetting anything.
- Smash burger.
- [Kwesi] Chef, consistency?
- Perfect. Beautiful.
- [Kwesi] Damn right, it is.
- Peanut butter smash?
- [Jonny] We have peanut butter ready to go.
- [Zach] We got slaw!
- [Keith] Mm, that's good.
We could almost serve that by itself.
- [Zach] Cucumber salad?
- [Kwesi] Cucumber salad.
- [Keith] Should be ready to go.
- [Zach] Fries? Got 'em.
- We should do animal style fries.
- No. - Okay.
- Stop. No new ideas.
- [Zach] Fried Oreos?
- [Keith] Got 'em.
- Got 'em. Barbecue smash?
We're just gonna slop some sloppy on top.
Go get some forks and let's try my pulled pork.
- It looks like pork.
- It's pretty good.
Sweet and spicy.
- Yeah, I added a lot of zing.
- Wow, a lot of residual heat at the end.
- Thank you.
- Is that a good thing, Keith?
- Very hot in your throat.
- That's fantastic!
- That's good.
- Yeah, man!
- That's good.
I can't believe, I mean I can believe you did that.
(Zach laughs)
(fire hisses)
- Whoo!
He was right.
It really comes out fast.
- This is my station. This is my world.
Check things off the list.
Order up.
Bing, bong, bong.
It's your boy, Brooklyn, holla.
⪠Martinelli is the champagne of juice âª
- All the heat is over here, unfortunately.
It's all in this corner.
- Are we gonna have a traffic jam here?
If people are going to pick up their food?
I don't like this.
- Hey, guys?
- [Zach] Yeah?
- We have seven customers here.
- [Zach] Have we tested the microphone yet?
- Oh yeah, the microphone is Gucci.
Yo, yo, yo, yo!
Kwesi James.
- [Jonny] Can I run to the bathroom?
- [Rachel] You didn't go to the bathroom before this?
- Well I was, I did, actually.
- Ah, we got three people walking in.
Johnny just left.
Are you kidding me?
- [Kwesi] There you go.
- [Rachel] We invited the entire "Mythical" staff over.
(Kwesi laughs) - Oh my god.
- [Kwesi] Oh my god.
- I treat all my customers
the same, there's no VIP's in my eye.
- [Kwesi] Keith.
- Jonny just like...
We have three customers.
All right. - What is this?
Test, test, test.
Lets get the test outta here.
- [Zach] Yeah.
- [Rachel] Whoo!
- All right you guys we're cool,
we're relaxed, we're casual.
Hey, what's going on?
Welcome to "Bun Buddies".
How can I help you?
- The person taking orders is usually the one
that keeps the vibe up.
- First time?
- [Customers] Yeah.
- Well we got a whole bunch of good stuff.
We got smash burgers, peanut butter smash.
It's one of our specialties today.
The pulled pork.
Depends how hungry you are.
But take a look, lemme know when you're ready.
- That's a very special moment, right?
The first touch.
- We touch them?
- Okay.
Can I get the peanut butter smash?
- Peanut, oh, you're going brave?
- [Customer 1] Yeah, I'm going.
- [Zach] Yeah, it's cool.
It's weird. It's fun.
- Okay, weird and fun?
Okay.
And then the cucumber salad. - You got pb and S.
pb and S. - You got it.
- Connect with the customer.
You have a little time to connect.
Maybe they have questions
about your concept and your food.
- This says everything is vegan?
- [Zach] Everything's vegan.
- What is the pulled pork?
- The pulled pork is jackfruit.
It has it, pork-ish.
- [Customer 2] I'll do the barbecue pulled pork, then.
And an order of french fries
- [Customer 3] And fried Oreos.
- All right, that'll be out in just a few minutes.
Appreciate it.
- When you get a ticket we say,
"Fire one burger. Fire one fry."
And then the kitchen says, "Heard."
- Barbecue smash.
Cucumber salad. - Yeah.
- Barbecue pulled pork. - Got it!
- Order of fries. - Heard!
- And some Oreos. I'll do the Oreos.
- [Kwesi] Heard.
- Without the callback, without the communication,
then you don't know if your calls are being heard.
- I'm gonna make the salad.
- I can do that. I can do that.
- [Kwesi] Got it, got it, got it.
- Where's my season salt?
- Season salt, heard!
- So, it's a really tiny space.
So, just make sure there's no yelling
on the bus.
- Over communication is good communication.
Let's get a pulled pork fries as well.
The fries on fire? Let me know.
Pulled pork fries, copy that.
Thank you.
Fries!
- Keep touching the flat top with my fingers.
And it hurts every time.
- [Kwesi] Is Oreos on the fire?
Talk to me.
- [Keith] Oreos are not in the fryer.
- [Kwesi] Got it. Coming towards you.
- Let's not put everything all
at once. - Pulled pork fries?
Not at all. That's perfect.
All of this is waiting
for you, all right, my brother?
- Standard smash and something else as well?
- [Kwesi] Got it. Yeah.
Pulled pork fries.
Let me, light up fries for me, please.
Got pulled pork right here, Jonny.
How's communication going for you, Keith?
- It's, I need less repeating
of the same things. - My bad. My bad. My bad.
- It's like, really overwhelming.
- Copy that. Copy that.
- Whatever you do, just, no fighting.
- Maybe like, everybody actually try
to do their best so that fighting doesn't happen.
(Rachel laughs off-camera) (Kwesi laughs)
- Oh, no.
- Not just like, (beep) around - Its starting.
- and then, not just like, (beep) around and waste time.
One time. - One time.
- Suddenly, everyone's mad
at me because I'm mad
but honestly it wasn't really my fault
that we got there.
- It's okay.
Move on to the next problem.
- [Jonny] Hey, Keith, can I get a bottom bun?
- Here. - This is pb smash.
- [Jonny] Got it.
- Bottom bun. Watch it. - Thank you.
- [Kwesi] Yup. - Thank you.
- [Kwesi] Thank you!
The salad's done.
Hey, how you doing my friends?
Yeah, your order is ready.
Come on down.
Okay.
Pb and j smash.
Nice.
Cucumber salad.
Barbecue pulled pork.
Does that complete your order?
(customers chatter)
- [Customer 2] Fried Oreos.
- I need fried Oreos.
- [Kwesi] Let me get that fried Oreos when they're ready.
All right guys?
You have a good one, all right?
Cheers.
- The smash burger consistency looks good.
- [Customer 1] It's smash.
That's smash. - Yeah.
- It's a smash burger.
Yeah, I just feel like the cheese peanut butter
like, mixture, is something I haven't had.
- [Customer 3] Okay.
- [Customer 1] I'm not mad.
- It's good. - That's good.
- [Customer 1] Pretty decent.
- A pb smash.
And what's the name for the order?
- Do you guys have a set amount
of time from like, order, to actually delivering the food?
- I would say 15 minutes is the, right amount of time.
- Fire me a peanut butter smash, please.
- Peanut butter smash, heard. Thank you.
- [Kwesi] Thank you!
- [Keith] So we got two burgers on right now?
- [Kwesi] Yup.
- [Zach] Yeah.
- [Kwesi] We got one pb smash.
- The vegan cheese is not gonna melt on its own.
We gotta trick it.
- [Kwesi] We got time.
- Over 15 minutes, pushing 20, is like,
the max we would ever try to go.
- [Keith] I got two burgers coming out.
That's the peanut butter smash.
- Peanut butter smash. Thank you. Keith.
- I mean, if you could do 10 minutes, I mean,
or less, would be even better.
- [Kwesi] See, I'm still waiting on
the peanut butter smash.
- Peanut butter smash does not have mayo on it, right?
- [Keith] Correct.
- And then lemme get one of those fries in the box.
- [Zach] All right, I gotta go.
We got people coming.
- Can I get a pickle on mine?
And then I'm gonna get a little onions on mine as well.
- We're cruising.
We got in the flow now.
- [Zach] Let me know if you have any questions
about the menu.
- So, what is the peanut butter smash?
- [Zach] Peanut butter smash is a smash burger
and we have peanut butter on it.
It's a little sweetened and you may think
that's crazy, but think about Thai food.
Peanut butter goes well, it gives you
a little extra protein, little extra sweetness.
- Add it on this and I'm waiting for my pb smash.
- Peanut butter smash. - Peanut butter smash.
Did you get the regular smash?
- [Kwesi] Pulled pork fries.
And a peanut butter smash?
- Whoo! This your lucky day.
We got it in the house.
(timer chimes loudly)
Have a good one.
Okay.
Good job team.
- [Keith] Awesome.
- My ex-boyfriend is here.
(intense choral music)
- How did that happen?
- Rachel?
- Jonny.
- This guy in the stripes.
This guy in the stripes is my ex.
- Should I hit on him?
Just to see how loyal he-
- Yeah, yeah, yeah.
Flirt with him and see if he, he flirts back.
- [Zach] So you want me to hit on him?
- Hit on him and see if he...
'Cause then if he he does hit
on you, then it means I shouldn't get back together
with him. - Is this like objective?
Okay, all right.
Hi, hot stuff.
- Hey there, how's it going?
- [Zach] Good, how are you?
- Doing well.
- [Zach] Looking fine on this day.
- You as well.
- Ask if he wants Jonny's eight-inchers.
- [Zach] And off the menu special today, we have
the Johnny's eight-inchers.
Fantastic.
- I've been there, done that. Thank you.
- Did he say "Been there, done that"?
- Stephen.
With a P-H.
- Zach, how'd it go?
Oh, they're still talking?
- What is your favorite movie?
- [Stephen] "Legally Blonde"?
- [Jonny] They're still talking?
- And then, could I get a phone number
for the order and for myself?
- [Stephen] Yeah, 9-7-8.
- That whore. That little whore.
That little whore. (hands clap)
I heard he gave you his phone number.
- Well yeah he gave me his number
and then he told me
that "Legally Blonde Two"
is better than the first one
and that we should watch it together.
- Oh my god.
This does not bode well for me.
- Is it hot in here or is it just Stephen?
- [Keith] I think we're in a good place.
- So, how many people can you serve in one hour?
- We typically can process and order a minute.
- Wow, that's like at least 30, 40, 60, even.
- In a minute.
- [Kwesi] It's a big bottleneck happening right now.
- [Zach] Well if you have any questions
about the menu, let me know.
We're famous for our smash burgers.
The peanut butter smash is what put us on the map.
- Okay, lemme get a double smash please.
- [Keith] All right, thank you.
- But you know, you run into situations
where it can take 45 minutes.
- Barbecue pulled pork sandwich.
- How's it going?
Welcome to "Bun Buddies".
We beat the meat.
- [Kwesi] Pulled pork fries, and pulled pork, on it.
- Fries and pulled pork? You got it.
- [Keith] It's hot, so hot.
- You know, something happens
and customers end up waiting 45 minutes to an hour.
- Oh we need ketchup outside.
- [Kwesi] Pulled pork fired?
- It happened.
I need more burgers!
- We need ketchup outside!
- I need more burgers.
- I got you Keith.
Where are the rest of our, oh.
- I'm in hell. I'm just in hell.
- It seems like morale is in a good place.
- Customers will wait an hour, two hours for food.
But once they order their food,
the time that they wait for the food
to reach their hands, they're way more impatient.
- We've been waiting for like half an hour?
- I don't know, 20?
- Maybe like 20?
Yeah, I'd say about 20 minutes.
- Guys, we're gonna run out of pulled pork quick.
A peanut butter smash, regular smash,
and a pulled pork fry.
- Thank you, heard.
- [Kwesi] I got a regular smash.
- I think we should tell people who ordered pulled pork
that it's small.
- [Keith] Yeah, it's hot in here.
It's about as hot as it could possibly be.
- Yo, Keith, I'm just checking in.
We got the double coming on fire, right?
- [Keith] Yes.
- Hello! Welcome, welcome.
- [Jonny] Keith, is there any more cucumber salad
than what's here?
- [Keith] No.
- [Staff Member] Keith, I just wanna let you know, we
just lost a customer out there.
- How?
- [Staff Member] He was waiting in line
and then he looked at his phone
and walked out and never came back.
- Do you think if we're getting like backlogged in the
kitchen we should like stop taking orders?
'Cause you said people are really chill in the
line before they've ordered.
Just, maybe the person who's taking orders can
just talk 'em up?
- Yeah.
- You know, totally.
- That is a strategy. - Be like,
"How you doing?"
Hey, Zach?
Zach? - Yeah.
Talk 'em up.
Don't take an order for a minute.
I'm very behind.
- [Zach] I've been exceptionally charming
so I don't know how much more charming I can be.
- We've implemented that strategy when we were really
in the fire, and buy me a few extra seconds.
Get to know the person a little bit.
Welcome to "Bun Buddies" where we beat the meat.
Is this your first time with us?
Wonderful.
Bobby Flay tried to beat us.
He couldn't.
Fuck you Bobby Flay.
So if they're being friendly
to me when they take my order, that's a strategy?
First of all, where'd you get that shirt?
'Cause that rocks
- At a thrift store.
That's no help to me.
Not only is it a very nice name.
I'm glad you didn't truncate it.
- You sold me on the peanut butter smash.
- You gonna go home and say
that I could have tried that and you didn't?
Okay, and what was your favorite band?
- Band?
Five Seconds of Summer.
- I played mistletoe with them once.
Yeah.
They didn't kiss me.
- Our front of house people, for festivals,
where it's just a line
the entire day for 12 hours straight.
They're usually in the front.
- So, you will, at festivals,
take orders outside the truck.
- [Rachel] Zach.
They said when they get busy to go down there.
Do you wanna go down there?
- So if our line's getting intense, get to the people.
Yeah, okay.
I'm gonna come down to you.
- I got a burger right here that can be dressed.
- Order up!
- I got two burgers waiting.
They've just been sitting here.
They've been sitting here.
They've just been sitting here y'all.
- Hello, hello.
Welcome to "Bun Buddies", we beat meat.
So we're a vegan restaurant.
- Can Zach come back in?
I don't feel like he needs to be out there.
- Peanut butter smash, which is exactly
what you think it's smash burger
with some peanut butter on it.
- We can only go as fast as we can cook.
So there's no reason to take 30 orders.
- Order up!
- Jonny, I need to put this over here.
- [Jonny] Okay.
- This is a double, I don't know what it's for yet.
Hold on. Hold on.
Jonny gotta put that on the ticket.
- This is a really good crew hoodie
and I'm sure I like a lot.
Can I see the sleeves?
- I don't like Zach being out there
because I can't hear what's going on.
- [Zach] Order up!
- 'Cause part of my workflow is
to listen to Zach.
- [Rachel] Zach!
- One moment I'll be right with you.
What's happening? What's happening?
I can't have you bringing
that many orders in this box.
- [Zach] I'm slowing down.
- Without having you
in here, I have no idea what's-
- [Kwesi] Okay, lemme get a double smash please.
- [Keith] Why do you need to be out there?
- Wait, is it a double peanut butter smash?
- No, just a peanut butter smash.
- [Keith] But I need the line to be slow.
- I'm slowing the line down by being out there.
- [Kwesi] Oh my God.
- [Keith] Cause ever since you left my life's been worse.
Can you just say yes to this?
- Okay. (laughs)
- The stress is definitely a lot.
- Can I give you a compliment?
- [Keith] Sure.
I think you're the MVP.
- [Keith] Hey, thanks.
- [Jonny] I got a barbecue pulled pork.
- Okay, we just need a barbecue pull pork, no slaw,
and this is ready to go.
- [Jonny] Got it, coming.
- [Zach] Guys, we are very much running behind.
- Pulled pork, no slaw.
Another fry?
Did we need more fries?
- I'm comin'!
- Oh, those are both tops.
- Oh, shit.
- [Keith] So just, help me here.
- [Kwesi] Jonny, we need more peanut butter!
- Okay, hold on.
- Ow!
Oh!
- [Kwesi] Oh yeah, that always happens, yup.
Gotta come in through the other side.
- So many people go like this and step up
and just bang their head.
- I'm okay, I'm okay, I'm okay.
- [Keith] Yeah, I know.
Just take a second.
He really got it.
He's taller.
Unfortunately, that's the worst consequence.
Just take a second.
- [Kwesi] Watch your back.
- [Keith] Hurts every time.
Hurts every time.
- Sorry, guys.
- [Kwesi] But it's okay, Jonny.
- [Rachel] If you're not okay, you need to go sit down.
- [Keith] And it's okay.
- Barbecue smash and a peanut butter smash.
- [Kwesi] Okay.
- [Rachel] How long have you been waiting?
- Almost a half hour.
- [Rachel] Are you hungry?
- I'm starving, yeah.
- It actually doesn't hurt.
- I thought that was a bit.
- [Rachel] No, it was real.
The medic checked him out and he's okay,
but I'm keeping an eye on him.
- [Zach] Yeah.
- I got a burger ready to become something
and another burger ready to become something else.
- [Kwesi] Whoa, what is all of this?
All right, now we're getting a little
outta hand now, guys.
It's gonna be a shit ton of pb smash.
- Guys, if you see a barbecue pulled pork,
we can make those right now.
- [Keith] I got two Oreos coming right now.
- I'm cool with non-toasted buns.
Get 'em out the (beep) door.
- [Keith] I'm gonna need another stack of burgers soon.
Okay, we just need a barbecue pulled pork, no slaw
and this is ready to go.
Guys, the line's getting too long.
I need reinforcements.
I need reinforcements.
I need reinforcements.
- You recommend we should distract them, then?
If they're
on line waiting? - Yeah, yeah.
- Some type of diversion?
- Maybe that might help.
- We haven't tried that yet,
but if it works for you guys
just, you know, maybe you guys will teach us something.
- [Keith] Hey!
- This it?
- [Keith] This is hell.
- Is this the place? This is hell?
- [Keith] It's hot in here.
- Okay, well I'm the magician.
- Oh, the magician's here!
- We need some magic!
- I hope I'm not doing the magic in here.
- [Keith] No.
- [Kwesi] No, no way!
- Hey, how are you doing?
- [Child] We were told you do magic.
- Oh, I do.
What kind of magic do you wanna see?
- Well, well, well, look who decided to come back?
- [Kwesi] Jonny we got a peanut butter smash.
- Honestly, you guys, I'm okay.
- Oh!
The wind got me.
Was that your card?
- [Kwesi] Fries times two.
- [Jonny] I'll get you a bunch of fries.
We got hot ones coming out.
- [Keith] Thanks y'all.
Mimi! Mimi!
Where you at? Mimi!
- Comes to the top.
- How'd you do it?
- [Kwesi] Sorry for the wait.
Here you go.
Okay, we are catching up, team.
- [Keith] Awesome.
- So, flip that over.
- Shut up.
- Oh, that's what I'm talking about.
- Colin! K-pop!
Who wants a smash burger?
- People loved the peanut butter smash.
He came for a second.
- Hell yeah!
⪠And Keith's on the grill âª
⪠And he's really nice now âª
⪠Because we're almost over âª
- How?
Pulled pork fries and a regular smash.
Here are some Oreos.
I put a extra one for you, because you're cool.
Maya, Maya, Maya, come on down.
Chris, Chris, come on down, Chris.
I love expediting.
- [Rachel] We just about made it.
- [Keith] Just about.
(intense western music)
- [Rachel] This is the owner of Smorgasburg.
- [Zach] Guys, we're cool, we're relaxed.
(Kwesi laughs)
- [Kwesi] Oh my God.
- Well we're at Smorgasburg every Sunday with our bus.
- Smorgasburg LA.
- [Keith] It's the biggest food festival market thing in LA.
Have you been to Smorgasburg?
- [Zach] Yeah.
- [Keith] It's good.
Hello, hello.
Welcome, welcome.
Okay, first time here?
- Yeah. Yup.
- Okay, well, first of all, love the shirt.
That's like, Grateful Dead aliens.
Sick as hell.
You know we're auditioning to see
if we can in the two year spot.
Big fan of what you do.
- Thanks.
I mean I feel like I have
to have the peanut butter smash, right?
- [Zach] Peanut butter smash.
- Is that the- - Its the move today.
- Seems like the thing, I mean.
- It's the exclamation point that gets people.
Let's get you some fries.
- [Zach Brooks] Is there something special
about the fries, or?
- They're fried. Fried potatoes.
(Zach Brooks laughs)
- [Zach Brooks] All right.
- You want a little pulled pork on those?
- [Zach Brooks] I mean...
Yeah, why not.
- [Zach] All right, order will be right up.
Thank you so much, Zach.
- Fire me up a pb smash.
- Peanut butter smash, yeah?
- [Kwesi] Peanut butter smash.
- [Keith] Do we need a pulled pork, Kwesi?
- [Kwesi] Yeah lemme get a pulled pork fries.
- [Keith] Got it.
- [Kwesi] On this ticket, Zach-
- Two burgers that can become whatever they need to be.
- [Kwesi] Boom. All right, cool.
So they got one pb smash, pulled pork fries,
that's all we waiting on.
- You want pulled pork fries?
- Yes, please.
Pulled pork fries, Jonny.
Good hustle guys.
- I got fries if you need more.
- [Kwesi] Boom. All right, cool.
So they got one pb smash pulled pork fries.
That's all we waiting on.
- [Jonny] Pulled pork fries.
- Let's have Zach come on down.
Zach, where you at, Zach?
Zach, detention. (laughs)
The boss, baby.
Fantastic.
Zach, you enjoy yourself.
Cheers, man.
You're doing a (beep) fantastic job.
- No, you're doing a great job.
- [Zach] Guys, that may have been our last order.
- [Keith] Wow.
- It's not bad.
It's not bad.
And this is like, jackfruit?
Yeah, it's not bad.
And the fact that they made
the potatoes from scratch is like, a huge plus.
And I mean, the peanut butter smash burger idea
is a great idea.
They probably need to
like, perfect it a little more
before we would really consider giving them
a spot at Smorgasburg, if I'm being honest.
They did this whole thing in 24 hours?
Like the, the menu, the everything?
- [Staff] Yeah.
- I mean that is, that is impressive.
- I am just...
I am so proud of us.
- How's everything tasting today, sir?
- I'm trying it for the first time.
- Oh well, please, go ahead.
- Yeah, man.
(Zach laughs)
Yeah, man.
- I thought it went pretty well.
Especially compared to the last one.
- It was pretty good.
- How about you, Amelia?
Did you like it, or not so much?
- Not so much.
- Not so much?
- Food was delicious.
Keith on the grill.
(beep) MVP, getting that heat in his face.
How we're you doing this all day?
- [Keith] It's hot.
- This is unbelievable.
I'm making one burger and I wanna die.
- [Keith] Yeah, it's hot.
- I think it could be saltier.
- I can't lie, this is good to me.
- Yeah, I talk too much.
- [Keith] A little.
- [Kwesi] I'll learn.
(Keith laughs)
- I loved it.
Honestly, I would've never tried peanut butter on a burger.
- This is our first day.
- Yeah, we killed it.
I think, I'm shocked at how smoothly that went.
So he said you gave him his number?
- I did.
I wasn't sure exactly what's happening here.
- (laughs) Okay.
- So, I figured until we have that conversation...
- Let me pull up a chair.
Let me pull up a chair.
- Cheers.
Cheers.
Cheers.
And honestly very much props
to the owners of this bus.
See, you see people working really, really hard
at a food festival.
You don't see that they actually worked hard eight hours
before that to make it possible
to work hard for the food festival.
- If you ever find that you're waiting
for your food and you get upset, just know
that people are dying in a tin box.
Okay?
So have a little goddamn patience.
(lively electronic music)
- I'm sorry, we all have to be on roller blades.
- We're in a bus! (Kwesi laughs)
- But like-
- No one's outside. - we'll never
have this opportunity again.
- No one's gonna see us.
- Absolutely not is anyone going
on roller blades near a fryer
and a flat top.
- [Jonny] Okay.
- Jonathan Cakes.
